Finishing a snow day in western North Carolina on a sweet note! It’s the first real snow of the season. To celebrate after all the outdoor play, we’re enjoying my Carrot-Beet Cupcakes. The sweetness from the carrots is perfectly balanced by the earthy notes in the beets. Throw in ground ginger, cinnamon, toasted coconut, pecans and raisins…topped with a whipped cream cheese buttercream frosting and you have a family favorite that is wintry delicious!
